Say the word and I’m already preheating the oven 😄
Here’s a simple, classic cheesecake—creamy, smooth, and not fussy. This one’s great if you want reliable comfort without overthinking it.


Easy Classic Cheesecake 🧀🍰

(9-inch, serves 10–12)

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

Filling

  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup sugar
  • 3 eggs, room temperature
  • 1 cup sour cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Make the crust
    • Mix crumbs, sugar, and butter.
    • Press into the bottom of a greased springform pan.
    • Bake 10 minutes, then cool.
  3. Make the filling
    • Beat cream cheese until smooth.
    • Add sugar and mix just until combined.
    • Add eggs one at a time (low speed).
    • Stir in sour cream and vanilla.
  4. Bake
    • Pour filling over crust.
    • Bake 55–60 minutes until edges are set and center slightly jiggles.
  5. Cool slowly
    • Turn oven off, crack door, let sit 1 hour.
    • Cool completely, then refrigerate 4 hours or overnight.
  6. Serve
    • Top with fruit, chocolate, caramel, or keep it classic.

Quick Flavor Add-Ons

  • 🍓 Strawberry topping or swirl
  • 🍫 Chocolate ganache
  • 🍋 Lemon zest + curd
  • 🍪 Oreo crust instead of graham crackers
