Here’s a teen-friendly Cauliflower Pepperoni Pizza Casserole—cheesy, veggie-packed, and full of pizza flavor! 🍕🥦


Ingredients (serves 3–4)

  • 1 medium head of cauliflower (or 4 cups cauliflower rice)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup pizza sauce
  • 1/2 cup sliced pepperoni (or more, to taste)
  • 1 tsp Italian seasoning or dried oregano
  • 1/2 tsp garlic powder (optional)
  • Salt & pepper to taste

Instructions

  1. Prep the cauliflower:
    • Preheat oven to 400°F (200°C).
    • Chop cauliflower into florets and pulse in a food processor until it’s rice-sized.
    • Steam or microwave cauliflower rice for 5 minutes until slightly tender.
  2. Make the base:
    • Mix the cooked cauliflower with half of the mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
    • Press this mixture into a greased baking dish to form a “crust.”
  3. Add toppings:
    • Spread pizza sauce evenly over the cauliflower base.
    • Sprinkle the remaining mozzarella cheese and arrange pepperoni slices on top.
  4. Bake:
    • Bake 15–20 minutes until cheese is melted and bubbly and edges are slightly golden.
  5. Serve:
    • Let cool a few minutes, then slice like a casserole or pizza.

Tips & Variations

  • Extra veggies: Add mushrooms, bell peppers, or onions with the pepperoni.
  • Cheesy boost: Sprinkle extra mozzarella or cheddar on top for gooeyness.
  • Shortcut: Use frozen riced cauliflower to save prep time.
