🥬 Slow Cooker Cabbage Stew

Ingredients (Serves 6)

  • 1 small head green cabbage, chopped
  • 3 carrots, sliced
  • 2–3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 4 cups vegetable broth (or chicken/beef broth)
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt (adjust to taste)

Optional Add-Ins

  • 1 lb ground beef or smoked sausage (brown first)
  • 1 can white beans or kidney beans (drained)
  • 1 bay leaf
  • 1/2 tsp red pepper flakes for heat

Instructions

1️⃣ Prep vegetables
Chop cabbage and other vegetables into bite-sized pieces.

2️⃣ Layer in slow cooker
Add cabbage, carrots, potatoes, onion, garlic, tomatoes, broth, oil, and seasonings. Stir gently.

3️⃣ Cook

  • LOW: 6–8 hours
  • HIGH: 3–4 hours

Stew is done when vegetables are tender.

4️⃣ Finish
Taste and adjust salt/pepper. Remove bay leaf if used.

  • Add a splash of apple cider vinegar or lemon juice at the end for brightness.
  • Stir in fresh parsley before serving.
