Cabbage soup

Here’s a simple and healthy Cabbage Soup recipe—light, flavorful, and easy to make 🥬🍲


Cabbage Soup

Ingredients (serves 4–6)

  • 1 small head of cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt & pepper, to taste
  • 1–2 tbsp olive oil
  • Optional: 1 cup cooked shredded chicken or sausage for protein

Instructions

  1. Sauté aromatics
    • Heat olive oil in a large pot over medium heat.
    • Cook onion, garlic, carrots, and celery 5 minutes until slightly softened.
  2. Add cabbage and tomatoes
    • Stir in chopped cabbage and diced tomatoes. Cook 2–3 minutes.
  3. Add broth and seasonings
    • Pour in broth, add thyme, paprika, salt, and pepper.
    • Bring to a boil, then reduce heat and simmer 20–30 minutes until vegetables are tender.
  4. Optional protein
    • Stir in cooked chicken or sausage during the last 5 minutes of simmering.
  5. Serve
    • Serve hot, with crusty bread if desired.

Tips & Variations

  • Spicy version: Add red pepper flakes or a splash of hot sauce.
  • Low-carb: Skip potatoes or beans if added.
  • Extra flavor: Add a splash of apple cider vinegar or lemon juice at the end.
  • Meal prep: Keeps well in the fridge up to 4 days, freezes well too.
