Cabbage Soup
Ingredients (serves 4–6)
- 1 small head of cabbage, chopped
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 1 tsp dried thyme
- 1 tsp paprika
- Salt & pepper, to taste
- 1–2 tbsp olive oil
- Optional: 1 cup cooked shredded chicken or sausage for protein
Instructions
- Sauté aromatics
- Heat olive oil in a large pot over medium heat.
- Cook onion, garlic, carrots, and celery 5 minutes until slightly softened.
- Add cabbage and tomatoes
- Stir in chopped cabbage and diced tomatoes. Cook 2–3 minutes.
- Add broth and seasonings
- Pour in broth, add thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 20–30 minutes until vegetables are tender.
- Optional protein
- Stir in cooked chicken or sausage during the last 5 minutes of simmering.
- Serve
- Serve hot, with crusty bread if desired.
