Cabbage Potato Soup

Here’s a simple, hearty recipe for Cabbage Potato Soup:


🥣 Ingredients

  • 1 small Cabbage, chopped
  • 2 medium Potatoes, peeled and diced
  • 1 onion, chopped
  • 2–3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp dried thyme or mixed herbs
  • Optional: 1 carrot, chopped, for sweetness

🍲 Instructions

  1. Sauté aromatics
    Heat olive oil in a large pot. Add onion and garlic, sauté until soft.
  2. Add vegetables
    Stir in cabbage, potatoes, and carrot if using. Cook 3–4 minutes.
  3. Add broth & seasoning
    Pour in the broth, add salt, pepper, and thyme. Bring to a boil.
  4. Simmer
    Reduce heat, cover, and simmer 20–25 minutes until vegetables are tender.
  5. Optional: Blend
    Use an immersion blender for a creamier texture or mash some potatoes in the pot.
  6. Serve
    Garnish with parsley or a drizzle of olive oil. Serve hot.

  • Add cooked chicken, beans, or sausage for extra protein
  • Sprinkle Parmesan or chili flakes for extra flavor
  • Leftovers taste even better the next day
