🌰 Butter Pecan Cake

Ingredients (9-inch cake, 2 layers)

For the cake:

  • 1 cup (2 sticks / 225 g) unsalted butter, softened
  • 1 ½ cups (300 g) granulated sugar
  • 4 large eggs
  • 2 ½ cups (312 g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (240 ml) whole milk
  • 1 tsp vanilla extract
  • 1 cup pecans, chopped

For the frosting:

  • ½ cup (1 stick / 115 g) unsalted butter, softened
  • 8 oz (225 g) cream cheese, softened
  • 3–4 cups powdered sugar
  • 1 tsp vanilla extract
  • ½ cup chopped pecans for garnish

Instructions

  1. Preheat oven
    • Preheat oven to 350°F (175°C).
    • Grease and flour two 9-inch round cake pans, or line with parchment paper.
  2. Prepare cake batter
    • In a large bowl, cream together butter and sugar until light and fluffy.
    • Add eggs, one at a time, beating well after each.
    • In a separate bowl, whisk together flour, baking powder, and salt.
    • Gradually add dry ingredients to the butter mixture, alternating with milk, beginning and ending with flour.
    • Stir in vanilla extract and chopped pecans.
  3. Bake
    • Divide batter evenly between prepared pans.
    • Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean.
    • Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  4. Prepare frosting
    • Beat butter and cream cheese together until smooth.
    • Gradually add powdered sugar until desired sweetness and consistency.
    • Mix in vanilla extract.
  5. Assemble cake
    • Place one cake layer on a serving plate.
    • Spread frosting over the top.
    • Place second cake layer on top and frost the top and sides.
    • Garnish with chopped pecans.
