Brown Sugar Meatloaf

Here’s a classic Brown Sugar Meatloaf recipe that’s sweet, savory, and super comforting.


Ingredients (Serves 4–6)

For the Meatloaf:

  • 1 ½ lbs (680 g) ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce (optional, but adds depth)

For the Brown Sugar Glaze:

  • 1/3 cup brown sugar, packed
  • 2 tbsp ketchup
  • 1 tsp Dijon mustard (optional, for tang)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. Mix the meatloaf:
    • In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, garlic, egg, salt, pepper, and Worcestershire sauce.
    • Mix gently with your hands or a spoon—don’t overmix, or it will be dense.
  3. Shape and add glaze:
    • Shape the mixture into a loaf and place it in the prepared pan.
    • In a small bowl, mix brown sugar, ketchup, and mustard. Spread this glaze evenly over the top of the meatloaf.
  4. Bake:
    • Bake for 50–60 minutes, until the meatloaf is cooked through (internal temperature should reach 160°F / 71°C).
    • Optional: For a slightly caramelized top, broil for 2–3 minutes at the end.
  5. Rest and serve:
    • Let the meatloaf rest for 5–10 minutes before slicing.
    • Serve with mashed potatoes, green beans, or your favorite sides.

This meatloaf is sweet, savory, and slightly sticky on top—a real comfort food classic.
