🥘 Broccoli Rice Casserole

Ingredients (4–6 servings)

  • 2 cups cooked rice (white, brown, or jasmine)
  • 3 cups broccoli florets (fresh or frozen, lightly steamed)
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • ½ cup sour cream or Greek yogurt
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp black pepper
  • Salt to taste
  • Optional topping: breadcrumbs or extra cheese for crunch

Instructions

  1. Preheat oven
    • 350°F (175°C)
    • Grease a 9×13-inch baking dish.
  2. Cook broccoli
    • Steam or blanch broccoli until just tender. Drain well.
  3. Prepare casserole mix
    • In a large bowl, combine cooked rice, broccoli, cheeses, soup, sour cream, onion, garlic, salt, and pepper.
  4. Assemble
    • Pour mixture into baking dish.
    • Optional: sprinkle breadcrumbs or extra cheese on top.
  5. Bake
    • Bake 25–30 minutes until bubbly and lightly golden on top.
  6. Serve
    • Let sit 5 minutes before serving.

  • Add protein: shredded chicken, ham, or bacon
  • Healthier version: use cauliflower rice, low-fat cheese, or Greek yogurt
  • Extra flavor: stir in herbs like thyme, parsley, or a pinch of nutmeg
  • Air fryer version: use small casserole-safe dish, 320°F (160°C) for 15–20 min
