Blueberry Cottage Cheese Breakfast Bake

Ingredients (serves 4–6)

  • 1 cup cottage cheese
  • 3 large eggs
  • ½ cup milk (any kind)
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 1 cup blueberries (fresh or frozen)

Optional toppings

  • Sliced almonds or walnuts
  • Extra blueberries
  • Powdered sugar or honey drizzle

Instructions

  1. Preheat oven
    • 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Mix wet ingredients
    • In a bowl, whisk eggs, cottage cheese, milk, honey, and vanilla.
  3. Add dry ingredients
    • Stir in oats, baking powder, cinnamon, and salt until combined.
  4. Fold in blueberries
    • Gently mix blueberries into the batter.
  5. Bake
    • Pour into baking dish and bake 35–40 minutes, until set and lightly golden.
  6. Cool & serve
    • Let rest 5–10 minutes before slicing.
