🍔 Bison Burgers

Ingredients (makes 4 burgers)

  • 1 lb (450 g) ground bison
  • 1 small onion, finely chopped or grated
  • 1 clove garlic, minced
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 burger buns
  • Toppings: cheese, lettuce, tomato, pickles, onion, condiments

Instructions

  1. Prepare the patties
    • In a bowl, gently mix ground bison, onion, garlic, Worcestershire sauce, salt, and pepper.
    • Form 4 evenly sized patties, slightly larger than your buns (bison shrinks when cooked).
  2. Cook the burgers
    Grill method:

    • Preheat grill to medium-high.
    • Cook burgers 3–4 minutes per side for medium (internal temp 140–145°F / 60–63°C).

    Skillet method:

    • Heat a little oil in a skillet over medium-high heat.
    • Cook 3–4 minutes per side until desired doneness.
  3. Rest & assemble
    • Let burgers rest 3–5 minutes to retain juices.
    • Toast buns lightly.
    • Add desired toppings and condiments. Serve immediately.

  • Don’t overwork the meat — bison is leaner than beef and can become dry.
  • Medium-rare to medium is ideal for bison to stay juicy.
  • Add fat if needed: Mix in a little bacon fat or olive oil for extra moisture.
