🥒 Zucchini Fritters

Ingredients (Serves 2–4)

  • 2 medium zucchinis (about 2 cups grated)
  • 1 small onion, finely grated or chopped
  • 1 large egg
  • ¼ cup all-purpose flour (or more if batter is too wet)
  • ¼ cup grated Parmesan cheese (optional)
  • Salt & pepper, to taste
  • 2–3 tbsp olive oil (or vegetable oil) for frying
  • Optional: fresh herbs like dill, parsley, or chives

Instructions

  1. Prepare zucchini:
    • Grate zucchini and place in a clean kitchen towel.
    • Squeeze out as much moisture as possible — this prevents soggy fritters.
  2. Mix batter:
    • In a bowl, combine zucchini, onion, egg, flour, Parmesan, salt, pepper, and herbs.
    • Stir until mixture holds together; add a little more flour if too wet.
  3. Heat oil:
    • Heat 2–3 tbsp oil in a skillet over medium heat.
  4. Form & cook fritters:
    • Spoon 2–3 tbsp of the mixture into the skillet and flatten lightly with a spatula.
    • Cook 3–4 minutes per side until golden brown and crispy.
  5. Drain & serve:
    • Place on paper towels to remove excess oil.
    • Serve hot with sour cream, yogurt, or a dipping sauce.

  • Squeeze zucchini thoroughly — moisture is the key to crispiness.
  • Don’t overcrowd the pan — fry in batches for even browning.
  • Make ahead: fritters can be baked at 400°F (200°C) for 15–20 minutes if you want a lighter version.
