Banana Cream Pudding

Ingredients

For the pudding:

  • 3 cups whole milk
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ tsp salt
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

For the layers:

  • 3–4 ripe bananas, sliced
  • 1–2 cups whipped cream or Cool Whip

Optional garnish:

  • Crumbled vanilla wafers or cookies
  • Shaved chocolate or caramel drizzle

Instructions

1. Make the pudding

  1. In a medium saucepan, combine milk, sugar, cornstarch, and salt. Whisk until smooth.
  2. Cook over medium heat, stirring constantly, until mixture thickens and starts to bubble.
  3. In a separate bowl, whisk egg yolks. Gradually add a small amount of the hot mixture to the yolks to temper them, whisking constantly.
  4. Pour egg mixture back into the saucepan and cook 1–2 more minutes until thick.
  5. Remove from heat and stir in butter and vanilla. Let cool slightly.

2. Assemble the pudding

  1. In a serving dish or individual cups, layer sliced bananas on the bottom.
  2. Pour a layer of pudding over the bananas.
  3. Repeat layers if desired.
  4. Top with whipped cream and optional garnish.

3. Chill & serve

  • Refrigerate at least 2 hours before serving for best flavor and texture.

Tips & Variations

  • Extra flavor: Add a splash of rum or banana liqueur to the pudding.
  • Crunchy layer: Sprinkle crumbled cookies between layers.
  • Mini trifles: Serve in small glasses for elegant individual portions.
  • Healthier swap: Use 2% milk and light whipped topping.
