Baked Potato with Sausage & Onions

Ingredients (4 servings)

  • 4 large russet potatoes
  • 1 lb sausage (smoked sausage, kielbasa, or Italian sausage), sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil or butter
  • Salt & black pepper
  • Optional toppings: shredded cheese, sour cream, green onions, mustard

Instructions

  1. Bake the potatoes
    • Preheat oven to 425°F (220°C).
    • Scrub potatoes, pierce with a fork, rub with oil and salt.
    • Bake directly on the rack 45–60 minutes until tender.
  2. Cook sausage & onions
    • Heat oil or butter in a skillet over medium heat.
    • Add sausage slices; brown on both sides (5–7 minutes).
    • Add onions and cook 8–10 minutes until soft and caramelized.
    • Season with pepper.
  3. Assemble
    • Split baked potatoes.
    • Fluff insides with a fork and add butter if desired.
    • Spoon sausage and onions over potatoes.
    • Add optional toppings.

Variations

  • Cheesy: Add shredded cheddar or mozzarella.
  • Spicy: Use hot Italian sausage or add red pepper flakes.
  • Air fryer potatoes: Cook at 400°F for 35–40 minutes.
  • One-pan version: Roast sausage, onions, and potatoes together (cubed) for a skillet meal.
