Ahh, Asparagus Casserole 🥦✨—creamy, cheesy, and perfect as a side dish for any dinner, especially spring or holiday meals. Here’s a classic baked version that’s rich but easy to make.


Creamy Asparagus Casserole

Ingredients

  • 1 lb (450 g) fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream or cream cheese
  • 1/2 cup mayonnaise
  • 1 small onion, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 cup crushed buttery crackers or breadcrumbs for topping
  • 2 tbsp butter, melted

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Prepare asparagus
    • Blanch asparagus in boiling water for 2–3 minutes until bright green and slightly tender.
    • Drain and set aside.
  3. Mix casserole base
    • In a bowl, combine sour cream, mayonnaise, onion, garlic powder, black pepper, and half of the shredded cheese.
  4. Assemble
    • Fold asparagus into the mixture.
    • Transfer to prepared baking dish and sprinkle remaining cheese on top.
    • Mix breadcrumbs with melted butter and sprinkle over the cheese.
  5. Bake
    • Bake 20–25 minutes until cheese is melted, bubbly, and topping is golden brown.
  6. Serve
    • Let cool 5 minutes before serving. Great as a side for chicken, beef, or ham.

  • Extra creamy: Add 1/4 cup heavy cream or milk to the cheese mixture.
  • Make-ahead: Assemble the casserole and refrigerate for a few hours; bake when ready.
  • Add flavor: Sprinkle paprika or crispy bacon bits on top.
  • Vegetarian twist: Omit mayo and add sautéed mushrooms or bell peppers.
