Classic Apple Pie Recipe

Ingredients

For the pie crust (or use store-bought):

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 6–8 tablespoons ice water

For the apple filling:

  • 6–7 cups apples, peeled, cored, and sliced (Granny Smith, Honeycrisp, or a mix)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons all-purpose flour or cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

For topping:

  • 1 tablespoon butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional)

Instructions

1. Make the crust

  1. In a bowl, mix flour, salt, and sugar.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add ice water, 1 tablespoon at a time, until the dough just comes together.
  4. Divide into two discs, wrap in plastic, and refrigerate for at least 1 hour.

2. Prepare the filling

  1. In a large bowl, toss the sliced apples with sugars, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt.
  2. Set aside while you roll out the dough.

3. Assemble the pie

  1. Preheat oven to 425°F (220°C).
  2. Roll out one dough disc and place it into a 9-inch pie dish.
  3. Add the apple filling and dot with butter.
  4. Roll out the second dough disc and place it on top (lattice or solid). Crimp edges and cut small vents if using a solid top.
  5. Brush with egg wash and sprinkle with coarse sugar if desired.

4. Bake

  1. Bake at 425°F for 20 minutes.
  2. Reduce heat to 375°F (190°C) and bake for 35–45 minutes, until the crust is golden and the filling is bubbling.
  3. If the edges brown too quickly, cover them with foil.

5. Cool & serve

  • Let the pie cool for at least 2 hours before slicing so the filling sets.

Tips & Variations

  • Best apples: Granny Smith for tartness, Honeycrisp or Fuji for sweetness.
  • Extra flavor: Add a pinch of allspice or cardamom.
  • Dutch apple pie: Swap the top crust for a crumb topping.
  • Make ahead: Apple pie can be made a day in advance and reheated.

Serving Ideas

  • Serve warm with vanilla ice cream
  • Add a dollop of whipped cream
  • Drizzle with caramel sauce for extra indulgence
