Beef Tips with Gravy

Ingredients (serves 4)

  • 2 lbs beef tips (sirloin, chuck, or stew beef), cut into bite-size pieces
  • Salt & pepper, to taste
  • 2 tbsp oil or butter
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce (optional)
  • 1 tsp dried thyme or rosemary
  • 1–2 tbsp flour or cornstarch (for thickening)
  • Optional: sliced mushrooms

Instructions

  1. Brown the beef
    • Season beef with salt and pepper.
    • Heat oil in a skillet over medium-high heat.
    • Brown beef in batches; remove and set aside.
  2. Sauté aromatics
    • In the same skillet, sauté onions (and mushrooms if using) until softened.
    • Add garlic and cook 30 seconds.
  3. Simmer
    • Return beef to pan.
    • Add beef broth, Worcestershire sauce, soy sauce, and herbs.
    • Cover and simmer 45–60 minutes until beef is tender (or longer if using tougher cuts).
  4. Thicken gravy
    • Mix flour or cornstarch with cold water to make a slurry.
    • Stir into simmering liquid and cook 2–3 minutes until thickened.
  5. Serve
    • Spoon over rice, noodles, or mashed potatoes.

  • Slow cooker option: Brown beef first, then cook low 6–8 hours.
  • Creamy twist: Stir in a bit of sour cream or heavy cream at the end.
  • Add vegetables: Bell peppers or carrots can be added near the end.
  • Extra flavor: Splash of red wine while simmering enhances richness.
