🥩 Old-Fashioned Meatloaf with Brown Gravy

Ingredients

Meatloaf

  • 2 lbs ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup milk
  • 2 large eggs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Worcestershire sauce
  • ½ cup ketchup (for topping)

Brown Gravy

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • Salt & pepper to taste
  • Optional: 1 tsp Worcestershire sauce

Instructions

  1. Preheat Oven
    • 350°F (175°C). Grease a loaf pan or line with parchment.
  2. Prepare Meatloaf
    • In a large bowl, combine ground meat, breadcrumbs, onion, garlic, milk, eggs, salt, pepper, and Worcestershire sauce.
    • Mix gently until just combined.
    • Shape into a loaf and place in the pan.
    • Spread ketchup evenly on top.
  3. Bake
    • Bake 60–70 minutes, until internal temperature reaches 160°F (71°C).
    • Let rest 10 minutes before slicing.
  4. Make Brown Gravy
    • In a saucepan, melt butter over medium heat.
    • Stir in flour to make a roux; cook 1–2 minutes.
    • Gradually whisk in beef broth, avoiding lumps.
    • Simmer until thickened.
    • Season with salt, pepper, and Worcestershire sauce if desired.
  5. Serve
    • Slice meatloaf and pour brown gravy over slices.
    • Serve with mashed potatoes and veggies for a classic meal.

Tips

  • Don’t overmix the meat or it will be dense.
  • For extra flavor, add chopped bell peppers or shredded carrots to the meat mixture.
  • Leftover meatloaf makes excellent sandwiches.
