Here’s a classic Quiche recipe—rich, creamy, and endlessly customizable 🥧


Classic Quiche (Quiche Lorraine–Style Base)

Ingredients (serves 6–8)

  • 1 pie crust (store-bought or homemade), unbaked
  • 4 large eggs
  • 1 cup heavy cream (or ½ cream + ½ milk)
  • 1 cup shredded cheese (Swiss, Gruyère, or cheddar)
  • ¾ cup cooked filling (bacon, ham, sausage, or vegetables)
  • ¼ tsp nutmeg (optional)
  • Salt & black pepper, to taste

  • Cooked bacon or ham
  • Sautéed onions
  • Spinach (well-drained)
  • Mushrooms
  • Broccoli or asparagus

Instructions

  1. Preheat oven
    • 375°F (190°C).
  2. Pre-bake crust (important!)
    • Line crust with parchment and fill with pie weights or dry beans.
    • Bake 10–12 minutes, remove weights, bake 5 more minutes.
  3. Prepare filling
    • Cook meats and vegetables fully; drain excess moisture.
  4. Mix custard
    • Whisk eggs, cream, nutmeg, salt, and pepper until smooth.
  5. Assemble
    • Sprinkle fillings and cheese evenly into crust.
    • Pour egg mixture over the top.
  6. Bake
    • Bake 35–45 minutes until set in the center and lightly golden.
    • A knife inserted near the center should come out clean.
  7. Rest & serve
    • Let quiche rest 10–15 minutes before slicing.

Tips & Variations

  • No crust: Pour filling into a greased pie dish and bake as usual.
  • Lighter quiche: Use whole milk or half-and-half instead of cream.
  • Flavor boost: Add Dijon mustard (1 tsp) to the custard.
  • Make ahead: Quiche reheats well and tastes great the next day.
