π Southern Banana Pudding (No-Fail Classic)
Ingredients
- 1 box vanilla wafers
- 4β5 ripe bananas, sliced
Pudding
- 1 cup sugar
- β cup all-purpose flour
- Pinch of salt
- 4 cups whole milk
- 4 egg yolks (save whites)
- 2 tbsp butter
- 1 tsp vanilla extract
Meringue (classic Southern style)
- 4 egg whites
- ΒΌ cup sugar
- Β½ tsp vanilla
Instructions
- Make pudding:
In a saucepan, mix sugar, flour, and salt. Slowly whisk in milk. - Cook over medium heat, stirring constantly, until thick.
- Beat egg yolks lightly. Temper with hot pudding, then return to pot.
- Cook 2 more minutes. Remove from heat.
- Stir in butter and vanilla.
Assemble
- In a baking dish, layer wafers β bananas β pudding.
- Repeat layers, ending with pudding.
Meringue
- Beat egg whites until soft peaks.
- Slowly add sugar, beat until stiff and glossy.
- Spread over pudding, sealing edges.
- Bake at 350Β°F for 10β12 minutes until golden.

- Bananas must be ripe, not green
- Homemade pudding > instant (always)
