Crust
- 1½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
Filling
- 3 (8 oz) blocks cream cheese, softened
- 1 cup sugar
- 3 eggs, room temperature
- 1 cup sour cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F (165°C).
- Make the crust
- Mix crumbs, sugar, and butter.
- Press into the bottom of a greased springform pan.
- Bake 10 minutes, then cool.
- Make the filling
- Beat cream cheese until smooth.
- Add sugar and mix just until combined.
- Add eggs one at a time (low speed).
- Stir in sour cream and vanilla.
- Bake
- Pour filling over crust.
- Bake 55–60 minutes until edges are set and center slightly jiggles.
- Cool slowly
- Turn oven off, crack door, let sit 1 hour.
- Cool completely, then refrigerate 4 hours or overnight.
- Serve
- Top with fruit, chocolate, caramel, or keep it classic.
