7-UP Cake

Ingredients

Cake:

  • 2 cups all-purpose flour

  • 3–4 cups powdered sugar

Instructions

  1. Prep oven and pan
    • Preheat oven to 350°F (175°C).
    • Grease and flour a 9×13-inch pan.
  2. Mix dry ingredients
    • In a large bowl, whisk together flour, sugar, salt, and baking soda.
  3. Cream butter & eggs
    • In another bowl, beat softened butter with eggs and vanilla until smooth.
  4. Combine ingredients
    • Gradually add dry ingredients, alternating with milk and 7-UP. Mix until just combined.
    • Fold in lemon zest if using.
  5. Bake
    • Pour batter into prepared pan.
    • Bake 30–35 minutes, or until a toothpick inserted in the center comes out clean.
    • Cool slightly.
  6. Make glaze (optional)
    • Melt butter, stir in milk and vanilla.
    • Gradually whisk in powdered sugar until smooth.
    • Pour over warm cake so it seeps in.
