šŸ‹ 7-UP Cake (Old-Fashioned Pound Cake)

Ingredients

  • 3 cups all-purpose flour
  • 3 cups sugar
  • 5 large eggs, room temp
  • 1½ cups unsalted butter, softened
  • ¾ cup 7-UP (room temp, not flat)
  • 2 tsp lemon extract (or 1 tsp lemon + 1 tsp vanilla)
  • ½ tsp salt

Glaze (optional but highly encouraged)

  • 2 cups powdered sugar
  • 2–3 tbsp 7-UP
  • 1 tsp lemon juice or extract

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a bundt or tube pan really well.
  2. Cream butter and sugar until light and fluffy (don’t rush this—about 4–5 minutes).
  3. Add eggs one at a time, mixing well after each.
  4. Mix in lemon extract and salt.
  5. Alternate adding flour and 7-UP, starting and ending with flour. Mix just until combined.
  6. Pour batter into pan and smooth the top.
  7. Bake 70–80 minutes, until a toothpick comes out clean.
  8. Cool in pan 10–15 minutes, then turn out.

Glaze

  • Whisk everything together and drizzle over warm cake so it soaks in ✨

  • Don’t overmix after adding flour—keeps it tender.
  • Cake tastes even better the next day (wrap tightly).
  • Works with Sprite too, but 7-UP gives the best lemony note.
