Ingredients (4 servings)

  • 4 large bell peppers (red, yellow, or green)
  • 1 lb (450 g) ground beef or turkey

  • 1 can (14 oz / 400 g) diced tomatoes

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 tbsp olive oil

Directions

Step 1: Prepare the peppers

  1. Preheat oven to 375°F / 190°C.
  2. Cut the tops off bell peppers and remove seeds and membranes.
  3. Optionally, blanch peppers in boiling water 2–3 minutes to soften slightly, then drain.

Step 2: Make the filling

  1. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft.
  2. Add ground meat and cook until browned. Drain excess fat if needed.
  3. Stir in cooked rice, half of the diced tomatoes, oregano, paprika, salt, and pepper. Cook 2–3 minutes until well combined.

Step 3: Stuff the peppers

  1. Spoon the filling into each pepper, packing lightly.
  2. Place peppers in a baking dish. Pour remaining diced tomatoes around the peppers.
  3. Cover with foil.

Step 4: Bake

  1. Bake 30–40 minutes, until peppers are tender.
  2. Remove foil, sprinkle cheese on top, and bake 5–10 more minutes until melted and bubbly.

Step 5: Serve

  • Garnish with fresh parsley. Serve warm with crusty bread or a light salad.

Tips

  • Variations: Add cooked sausage, mushrooms, or corn to the filling.
  • For a lighter version, use quinoa or cauliflower rice instead of white rice.
  • Can be made ahead: prepare peppers and filling, then refrigerate and bake later.
