Crock Pot Beef Stroganoff

Here’s a Crock Pot Beef Stroganoff recipe 🥩🍄—creamy, comforting, and perfect for an easy slow-cooked dinner.


Ingredients (serves 4–6)

  • 2 lbs beef stew meat or chuck roast, cut into 1–2 inch cubes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • Salt & pepper, to taste
  • 1 tsp paprika (optional)
  • 1 cup sour cream (added at the end)
  • 2 tbsp flour or cornstarch (for thickening, optional)
  • Cooked egg noodles or rice, for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep slow cooker
    • Place beef, onion, garlic, and mushrooms in the crock pot.
  2. Add liquids & seasonings
    • Pour in beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.
    • Stir to combine.
  3. Cook
    • Cover and cook on low 6–8 hours or high 3–4 hours, until beef is tender.
  4. Thicken sauce (optional)
    • If desired, mix 2 tbsp flour or cornstarch with a little water to make a slurry.
    • Stir into the crock pot 30 minutes before serving to thicken sauce.
  5. Add sour cream
    • Stir in sour cream just before serving. Do not boil after adding sour cream to prevent curdling.
  6. Serve
    • Serve over cooked egg noodles, rice, or mashed potatoes.
    • Garnish with fresh parsley.

Tips & Variations

  • Creamier sauce: add ½ cup cream cheese along with sour cream.
  • Vegetables: add carrots or peas for extra texture.
  • Make ahead: prepare ingredients the night before and refrigerate; cook the next day.
  • Spicy twist: add a pinch of cayenne or smoked paprika for a kick.
