7-UP Cake

Here’s a classic 7-UP Cake recipe 🍋🥧—moist, light, and slightly lemony, made using 7-UP soda for extra fluffiness.


Ingredients (9×13-inch pan)

  • 1 box yellow cake mix (15.25 oz)
  • 1 small box instant lemon pudding (3.4 oz)
  • 4 large eggs
  • ½ cup vegetable oil
  • 1 cup 7-UP soda
  • 1 tsp vanilla extract

Frosting (optional)

  • 1 box powdered sugar (16 oz)
  • ½ cup butter, softened
  • 2–3 tbsp milk or 7-UP
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven
    • 350°F (175°C).
    • Grease and flour a 9×13-inch baking pan.
  2. Mix cake batter
    • In a large bowl, combine cake mix, lemon pudding, eggs, oil, 7-UP, and vanilla.
    • Beat on medium speed for 2–3 minutes until smooth.
  3. Bake
    • Pour batter into prepared pan.
    • Bake 35–40 minutes or until a toothpick comes out clean.
  4. Cool
    • Let cake cool completely in pan on a wire rack.
  5. Make frosting (optional)
    • Beat butter until creamy.
    • Gradually add powdered sugar, milk or 7-UP, and vanilla until smooth and spreadable.
    • Spread over cooled cake.

Tips & Variations

  • Citrus twist: add lemon or lime zest to the batter for extra flavor.
  • Coconut version: fold in 1 cup shredded coconut before baking.
  • Pineapple 7-UP cake: substitute 7-UP with pineapple juice for tropical flavor.
  • Moisture tip: poke small holes in the cooled cake and drizzle a little extra 7-UP or lemon syrup over it before frosting.
