Crispy on the outside, creamy on the inside, croquettes can be made with mashed potatoes, meat, or seafood.
Ingredients (makes ~12 croquettes)
- 2 cups mashed potatoes (or finely chopped cooked meat/chicken/fish)
- ½ cup cooked and finely chopped onion (optional)
- 1 cup cooked shredded meat, ham, or fish (optional)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp nutmeg (optional, for potato croquettes)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1–2 cups breadcrumbs
- Vegetable oil for frying
Instructions
- Prepare filling
- In a bowl, combine mashed potatoes or meat mixture with onion, seasoning, and optional nutmeg.
- Shape mixture into small logs or ovals (about 2–3 inches long).
- Coat croquettes
- Roll each croquette in flour, dip in beaten egg, then coat evenly with breadcrumbs.
- Fry
- Heat 1–2 inches of vegetable oil in a skillet to 350°F (175°C).
- Fry croquettes in batches until golden brown and crispy (2–4 minutes per side).
- Drain on paper towels.
- Serve
- Serve hot with dipping sauces such as aioli, ketchup, or mustard.
Tips & Variations
- Baked version: preheat oven to 400°F (200°C) and bake on a greased sheet for 20–25 minutes, flipping halfway.
- Cheesy croquettes: add shredded cheese to the filling for a gooey center.
- Herbs & spices: parsley, thyme, paprika, or cayenne for extra flavor.
