Ingredients
- 1–1½ lb steak (sirloin, ribeye, or NY strip)
- Salt & black pepper
- 1 tsp paprika (optional)
- 2 tbsp olive oil
- 3 tbsp butter
- 4–5 cloves garlic, minced
- 1 tbsp fresh parsley (optional)
- Optional finish: splash of Worcestershire or soy sauce
Instructions
- Cut steak into bite-size cubes. Pat very dry (this matters).
- Season generously with salt, pepper, and paprika.
- Heat a cast-iron or heavy skillet over high heat. Add oil.
- Sear steak bites in a single layer (work in batches). Cook 2–3 minutes per side until browned. Remove and set aside.
- Lower heat to medium. Add butter and garlic; cook ~30 seconds until fragrant (don’t burn!).
- Return steak to pan, toss to coat. Add Worcestershire/soy if using.
- Finish with parsley and serve immediately.
