Creamy Chicken Spinach Soup

Ingredients

  • 2 tbsp butter or olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups cooked chicken, shredded or diced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 4 cups fresh spinach, roughly chopped
  • 1/2 tsp dried thyme (or 1 tsp fresh)
  • Salt & black pepper, to taste
  • Optional: 1/4 tsp nutmeg for warmth

Instructions

  1. Sauté vegetables
    • In a large pot, melt butter over medium heat.
    • Add onion, garlic, carrots, and celery; sautĂ© 5–7 min until tender.
  2. Add chicken & broth
    • Stir in shredded chicken, thyme, salt, and pepper.
    • Pour in chicken broth and bring to a simmer for 10 min.
  3. Add cream
    • Lower heat and stir in heavy cream. Simmer gently 5 min.
  4. Add spinach
    • Stir in spinach until wilted. Adjust seasoning with salt, pepper, and optional nutmeg.
  5. Serve
    • Serve hot, optionally with crusty bread or croutons.
