Fresh Tomato Salad

Ingredients

  • 4–5 ripe tomatoes (any variety: cherry, heirloom, or Roma), sliced or chopped
  • 1/4 red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar or lemon juice
  • Salt & black pepper, to taste
  • 1/4 cup fresh basil, torn or chopped
  • Optional: 1/4 cup feta cheese or mozzarella balls

Instructions

  1. Prepare vegetables
    • Slice or chop tomatoes and red onion.
    • Place in a large bowl.
  2. Dress the salad
    • Drizzle with olive oil and balsamic vinegar (or lemon juice).
    • Season with salt and pepper.
  3. Add toppings
    • Toss in fresh basil and optional cheese.
    • Gently toss to combine without crushing tomatoes.
  4. Serve
    • Serve immediately or chill for 15–20 minutes for flavors to meld.
