Ingredients
Tart Crust
- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup cold butter, cubed
- 1 egg yolk
- 1–2 tbsp cold water

Cream Filling
- 1 cup whole milk
- 3 egg yolks
- 1/4 cup sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract

Topping
- 1 lb fresh strawberries, hulled & halved
- 1/4 cup strawberry jam (for glaze)
Instructions
- Make the crust
- Mix flour and powdered sugar. Cut in butter until crumbly.
- Add egg yolk and water; mix until dough forms.
- Press into tart pan, chill 20 minutes.
- Bake at 375°F (190°C) for 18–20 minutes. Cool completely.
- Make pastry cream
- Heat milk until steaming.
- Whisk yolks, sugar, and cornstarch.
- Slowly whisk hot milk into egg mixture.
- Return to heat, cook until thick.
- Stir in vanilla and cool.
- Assemble
- Spread pastry cream into cooled crust.
- Arrange strawberries on top.
- Glaze
- Warm jam and brush over strawberries for shine.
- Chill & serve
- Chill at least 1 hour before slicing.
