Ah, Shrimp and Spinach 🍤🥬—quick, flavorful, and super versatile. This is a simple garlic butter version that works as a light main or over pasta, rice, or mashed potatoes.


Garlic Shrimp and Spinach

Ingredients

  • 1 lb (450 g) shrimp, peeled & deveined
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 4–5 cups fresh spinach
  • Salt & black pepper, to taste
  • 1/2 tsp red pepper flakes (optional)
  • Juice of 1/2 lemon
  • Optional: grated Parmesan or a splash of cream

Instructions

  1. Cook shrimp
    • Heat oil or butter in a large skillet over medium-high heat.
    • Season shrimp with salt and pepper.
    • Cook 2–3 minutes per side until pink and opaque. Remove and set aside.
  2. Sauté garlic & spinach
    • In the same skillet, add garlic and red pepper flakes.
    • Cook 30 seconds until fragrant.
    • Add spinach and cook until just wilted (1–2 minutes).
  3. Combine
    • Return shrimp to the pan.
    • Squeeze lemon juice over everything and toss gently.
  4. Serve
    • Serve immediately. Optional: sprinkle with Parmesan or add a splash of cream for richness.

  • Creamy version: Add 1/4 cup heavy cream or cream cheese at the end.
  • Pasta meal: Toss with cooked linguine or penne.
