Creamy Chicken Spinach Soup

Ingredients

  • 1 lb (450 g) cooked chicken, shredded or diced (rotisserie works well)
  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 4 cups fresh spinach (or 1 package frozen, thawed)
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • Salt & pepper, to taste
  • Optional: 1/4 tsp nutmeg for warmth
  • Optional garnish: grated Parmesan cheese

Instructions

  1. Sauté vegetables
    • In a large pot, heat olive oil over medium heat.
    • Cook onion, carrots, and celery until soft (~5–7 minutes).
    • Add garlic and cook 30 seconds until fragrant.
  2. Add broth & chicken
    • Pour in chicken broth, add thyme, and bring to a simmer.
    • Stir in cooked chicken and let simmer 10 minutes to meld flavors.
  3. Add cream & spinach
    • Reduce heat to low.
    • Stir in cream and spinach, cook 3–5 minutes until spinach is wilted.
    • Season with salt, pepper, and nutmeg if using.
  4. Serve
    • Ladle hot soup into bowls.
    • Garnish with Parmesan cheese if desired.

🔥 Tips

  • Use rotisserie chicken for a quick, flavorful shortcut.
  • For thicker soup, blend 1/3 of the soup before adding spinach.
  • Add a squeeze of lemon juice at the end for brightness.
  • Works beautifully with kale or Swiss chard as a spinach alternative.
