  3. Knead the dough:
    • On a lightly floured surface, knead for 8–10 minutes until smooth and elastic.
    • Alternatively, use a stand mixer with a dough hook for 5–6 minutes.
  4. First rise:
    • Place dough in a greased bowl, cover with a cloth or plastic wrap.
    • Let rise 1–1.5 hours, until doubled in size.
  5. Shape the loaf:
    • Punch down the dough, shape it into a loaf, and place it in a greased loaf pan.
  6. Second rise:
    • Cover and let rise for 30–45 minutes, until the dough rises slightly above the pan.
  7. Bake:
    • Preheat oven to 375°F (190°C).
    • Bake 25–30 minutes, until golden brown and the loaf sounds hollow when tapped.
    • Optional: brush the top with melted butter for a softer crust.
  8. Cool:
    • Let bread cool on a wire rack at least 20 minutes before slicing.

  • For a crunchier crust, bake on a tray with a small pan of water in the oven to create steam.
  • Add herbs, garlic, or cheese to the dough for flavor variations.
  • Whole wheat flour can replace half of the white flour for a healthier loaf.
