Instructions

  1. Preheat oven
    • Preheat to 400°F / 200°C.
  2. Cook the potatoes
    • Boil potatoes in salted water until tender (15–20 minutes).
    • Drain, mash with butter, milk, salt, and pepper. Set aside.
  3. Make the filling
    • Heat a skillet over medium heat. Cook lamb (or beef) until browned.
    • Add onion, carrot, and garlic; cook until softened.
    • Stir in tomato paste and flour; cook 1–2 minutes.
    • Add broth, Worcestershire sauce, thyme, salt, and pepper.
    • Simmer until thickened (~5 minutes).
    • Stir in peas at the end.
  4. Assemble the pie
    • Transfer meat filling to a baking dish.
    • Spread mashed potatoes over the top, smoothing with a spatula or creating peaks for browning.
    • Optional: sprinkle cheddar on top.
  5. Bake
    • Bake 20–25 minutes, until top is golden and filling is bubbling.
    • Optional: broil 2–3 minutes for extra golden peaks.
  6. Serve
