Instructions

  1. Sauté aromatics
    • Heat oil or butter in a pot over medium heat.
    • Cook onions until soft and translucent (5–6 minutes).
    • Add garlic and sautĂ© 1–2 minutes until fragrant (don’t let it burn!).
  2. Add potatoes and broth
    • Stir in potatoes if using, thyme, and broth.
    • Bring to a simmer and cook 15–20 minutes until potatoes are tender.
  3. Blend
    • Use an immersion blender for smooth soup, or transfer to a blender.
    • Optional: stir in cream or milk for richness.
  4. Season
    • Add salt and pepper to taste. Adjust garlic flavor if needed.
  5. Serve
    • Garnish with parsley and a drizzle of olive oil or a sprinkle of cheese.

  • Roasted garlic version: Roast whole garlic cloves in olive oil first for a sweeter, mellower flavor.
  • Thick & creamy: Blend potatoes and add a touch of cream.
