Instructions

Make the biscuits:

  1. Preheat oven: 425°F / 220°C.
  2. Mix dry ingredients: In a bowl, whisk flour, baking powder, sugar, and salt.
  3. Cut in butter: Use a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. Add milk: Stir until just combined — dough should be soft but not sticky.
  5. Shape & bake:
    • Turn dough onto floured surface, pat to ~1-inch thickness.
    • Cut into rounds with a biscuit cutter.
    • Bake 12–15 minutes until golden.

Make the gravy:

  1. Cook sausage: In a skillet over medium heat, cook sausage until browned. Break into small pieces.
  2. Add flour: Sprinkle flour over sausage, cook 1–2 minutes to remove raw taste.
  3. Add milk: Slowly whisk in milk until smooth.
  4. Simmer: Cook 5–7 minutes, stirring occasionally, until thickened. Season with salt, pepper, and optional cayenne.

Serve:

  • Split biscuits in half and pour sausage gravy generously over the top.
  • Optional: garnish with extra black pepper or fresh herbs.
