🍝 Creamy Spinach and Mushroom Spaghetti

Ingredients (serves 4)

  • 12 oz (340 g) spaghetti
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 10 oz (280 g) mushrooms, sliced (button, cremini, or your choice)
  • 4 cups fresh spinach, roughly chopped
  • 1 cup (240 ml) heavy cream or half-and-half
  • ½ cup (50 g) grated Parmesan cheese
  • Salt & pepper, to taste
  • Optional: pinch of nutmeg or red pepper flakes
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta: Boil spaghetti in salted water according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
  2. Cook vegetables:
    • In a large skillet, heat olive oil or butter over medium heat.
    • Sauté onion for 2–3 minutes until translucent.
    • Add garlic and mushrooms, cooking 5–7 minutes until mushrooms are soft and lightly browned.
  3. Add spinach: Stir in chopped spinach and cook 1–2 minutes until wilted.
  4. Make sauce:
    • Lower heat to medium-low. Pour in heavy cream and bring to a gentle simmer.
    • Stir in Parmesan until melted and smooth.
    • If sauce is too thick, add reserved pasta water a little at a time until desired consistency.
  5. Combine: Toss cooked spaghetti in the creamy vegetable sauce until well coated.
  6. Season & serve: Add salt, pepper, and optional nutmeg or red pepper flakes. Garnish with parsley and extra Parmesan. Serve immediately.

  • Extra flavor: Add a splash of white wine when sautéing mushrooms.
  • Protein option: Toss in cooked chicken, shrimp, or crispy bacon for a fuller meal.
  • Creaminess: For a lighter version, use half milk and half cream.
