🍗 Garlic Brown Sugar Chicken

Ingredients (4 servings)

  • 1½ lb (700 g) chicken thighs or drumsticks
  • Salt & pepper, to taste
  • 1 tbsp olive oil

Sauce

  • ⅓ cup brown sugar (packed)
  • 4–6 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp paprika
  • Optional: pinch of red pepper flakes for heat

Instructions

Oven Method

  1. Preheat oven to 400°F / 200°C.
  2. Season chicken: Pat dry, season with salt and pepper.
  3. Sear (optional but recommended): Heat oil in an oven-safe skillet. Sear chicken 2–3 min per side until golden.
  4. Prepare sauce: Mix brown sugar, garlic, soy sauce, vinegar, paprika, and optional red pepper flakes.
  5. Bake: Pour sauce over chicken. Bake 25–30 min, basting halfway through, until cooked through (internal temp 165°F / 74°C) and sauce is sticky.

Skillet Method

  1. Sear chicken in oil until golden.
  2. Add sauce and simmer on medium-low 10–15 min, turning occasionally until thick and caramelized.

Tips

  • Thighs stay juicier than breasts.
  • Avoid burning the sugar — medium heat is key once sauce is added.
  • Garnish with green onions or sesame seeds for extra flavor.
  • Serve over rice, mashed potatoes, or roasted veggies.
