π Chow Mein
Ingredients (2β3 servings)
- 8 oz / 225 g chow mein or thin egg noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp grated ginger (optional)
Veg
- 2 cups shredded cabbage
- 1 carrot, julienned
- 3 green onions, cut into 2-inch pieces
- Optional: bean sprouts, bell pepper
Protein (optional)
- 8 oz / 225 g chicken, beef, shrimp, or tofu, thinly sliced
Sauce
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (or hoisin)
- 1 tsp sugar
- 1 tsp sesame oil
- 2 tbsp water
Method
- Cook noodles until just tender. Drain well.
- Heat oil in a hot wok or pan.
- Cook protein quickly until just done. Remove.
- Add garlic & ginger (30 sec).
- Add vegetables, stir-fry 2β3 minutes.
- Add noodles, protein, and sauce. Toss over high heat 1β2 minutes.
- Serve immediately.
Tips
- High heat = good chow mein
- Donβt overcrowd the pan
- For crispy noodles, let them sit untouched for 30β60 seconds before tossing
- Add chili oil or white pepper for takeout flavor
