Chow mein

Got it 🍜 β€” here’s a clean, classic chow mein recipe, no fluff.


🍜 Chow Mein

Ingredients (2–3 servings)

  • 8 oz / 225 g chow mein or thin egg noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp grated ginger (optional)

Veg

  • 2 cups shredded cabbage
  • 1 carrot, julienned
  • 3 green onions, cut into 2-inch pieces
  • Optional: bean sprouts, bell pepper

Protein (optional)

  • 8 oz / 225 g chicken, beef, shrimp, or tofu, thinly sliced

Sauce

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (or hoisin)
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 2 tbsp water

Method

  1. Cook noodles until just tender. Drain well.
  2. Heat oil in a hot wok or pan.
  3. Cook protein quickly until just done. Remove.
  4. Add garlic & ginger (30 sec).
  5. Add vegetables, stir-fry 2–3 minutes.
  6. Add noodles, protein, and sauce. Toss over high heat 1–2 minutes.
  7. Serve immediately.

Tips

  • High heat = good chow mein
  • Don’t overcrowd the pan
  • For crispy noodles, let them sit untouched for 30–60 seconds before tossing
  • Add chili oil or white pepper for takeout flavor

If you want American takeout style, Hong Kong crispy chow mein, or a 15-minute version, say which one.
