Ingredients

Mashed Potato Topping

  • 2 lb (900 g) potatoes, peeled & chopped
  • 4 tbsp butter
  • ½ cup milk (or cream)
  • Salt & pepper, to taste

Filling

  • 1 tbsp olive oil
  • 1 lb (450 g) ground lamb (or beef for “cottage pie”)
  • 1 onion, diced
  • 2 carrots, diced
  • 1 cup peas
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 cup stock (beef or lamb)
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme (fresh or dried)
  • Salt & pepper, to taste

Instructions

  1. Prepare mashed potatoes: Boil potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper. Set aside.
  2. Cook filling: Heat oil in a pan, brown lamb, then add onion and carrots. Cook until softened. Stir in garlic for 30 seconds.
  3. Add tomato paste, Worcestershire sauce, thyme, and stock. Simmer 10–15 minutes until thickened. Stir in peas at the end.
  4. Assemble pie: Spread meat mixture in a baking dish. Top with mashed potatoes, roughing the surface with a fork.
  5. Bake: 400°F (200°C) for 25–30 min until golden on top. Optional: broil 2–3 minutes for crispy peaks.
  6. Let rest 5–10 minutes before serving.

Tips for Extra Flavor

  • Add a splash of red wine to the filling for depth
  • Mix cheddar cheese into the potato topping
  • Sprinkle paprika or breadcrumbs on top for a golden finish
