Sweet potato pie 🥧 — classic, smooth, and cozy. Here’s a simple, Southern-style recipe that’s rich but not overly sweet.

Sweet Potato Pie (9-inch)

Ingredients

  • 1 unbaked pie crust
  • 2 cups mashed cooked sweet potatoes (about 2–3 medium)
  • ½ cup melted butter
  • ¾ cup sugar (or ½ cup sugar + ¼ cup brown sugar)
  • 2 large eggs
  • ½ cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger (optional)
  • ¼ tsp salt

Instructions

  1. Prep sweet potatoes
    Boil or bake until very tender. Peel and mash until smooth (no lumps).
  2. Mix filling
    In a bowl, combine sweet potatoes, butter, and sugar.
    Beat in eggs, then milk, vanilla, spices, and salt.
  3. Fill crust
    Pour mixture into unbaked pie crust. Smooth the top.
  4. Bake
    Bake at 175°C / 350°F for 50–60 minutes, until the center is just set and a knife comes out mostly clean.
  5. Cool
    Let cool completely to fully set before slicing.

Tips & Variations

  • Extra smooth: Blend filling in a food processor
  • Deeper flavor: Roast sweet potatoes instead of boiling
  • Less sweet: Reduce sugar to ½ cup
  • Marshmallow topping: Add mini marshmallows and broil briefly
  • Dairy-free: Use coconut milk and vegan butter
