Sweet Potato Pie (9-inch)
Ingredients
- 1 unbaked pie crust
- 2 cups mashed cooked sweet potatoes (about 2–3 medium)
- ½ cup melted butter
- ¾ cup sugar (or ½ cup sugar + ¼ cup brown sugar)
- 2 large eggs
- ½ cup evaporated milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ginger (optional)
- ¼ tsp salt
Instructions
- Prep sweet potatoes
Boil or bake until very tender. Peel and mash until smooth (no lumps). - Mix filling
In a bowl, combine sweet potatoes, butter, and sugar.
Beat in eggs, then milk, vanilla, spices, and salt. - Fill crust
Pour mixture into unbaked pie crust. Smooth the top. - Bake
Bake at 175°C / 350°F for 50–60 minutes, until the center is just set and a knife comes out mostly clean. - Cool
Let cool completely to fully set before slicing.
