2. Cook the steak

  1. Bring steaks to room temperature (about 20 minutes out of the fridge).
  2. Season both sides with salt and pepper.
  3. Heat oil or butter in a skillet over medium-high heat.
  4. Cook steaks depending on thickness:
    • 1-inch thick: 3–4 minutes per side for medium-rare
    • 1 ½-inch thick: 5–6 minutes per side for medium
