A Swedish Meatball Pasta Bake is a comforting, hearty dish that combines the creamy, rich flavors of Swedish meatballs with pasta and a cheesy, baked topping. It’s a great way to enjoy a classic Swedish dish in a more casual, easy-to-make format. Perfect for a family dinner or potluck!

Here’s a recipe for Swedish Meatball Pasta Bake:

Swedish Meatball Pasta Bake Recipe

Ingredients:

For the Swedish Meatballs:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme or dried parsley
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for frying)

For the Pasta Bake:

  • 8 oz pasta (penne, rigatoni, or rotini work well)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups beef broth (or chicken broth)
  • 1 cup heavy cream
  • 1 teaspoon soy sauce (for a bit of extra umami flavor)
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup Parmesan cheese, grated
  • 1 cup shredded mozzarella cheese

Instructions:

1. Make the Swedish Meatballs:

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic powder, thyme, salt, and pepper. Mix until just combined (don’t overmix).
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches, cooking them for 5-7 minutes, turning occasionally, until browned on all sides. Remove from the skillet and set aside.

2. Prepare the Pasta:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

3. Make the Sauce:

  1. In the same skillet you used for the meatballs, melt the butter over medium heat.
  2. Once melted, whisk in the flour and cook for 1-2 minutes to create a roux. This will help thicken the sauce.
  3. Slowly add the beef broth, whisking continuously to avoid lumps. Then, stir in the heavy cream, soy sauce, thyme, and a pinch of salt and pepper.
  4. Bring the sauce to a simmer and cook for 3-4 minutes, allowing it to thicken slightly. Taste and adjust the seasoning if needed.

4. Assemble the Pasta Bake:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked pasta, the meatballs, and the creamy sauce. Gently stir to coat the pasta and meatballs in the sauce.
  3. Transfer the mixture to a greased 9×13-inch baking dish.
  4. Top the pasta and meatballs with Parmesan cheese and shredded mozzarella.

5. Bake:

  1. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
  2. If you want a crispier top, you can broil for an additional 2-3 minutes, but watch closely to prevent burning.

6. Serve:

  1. Let the pasta bake cool for a few minutes before serving.
  2. Garnish with chopped fresh parsley or chives for a pop of color and freshness, if desired.

Tips and Variations:

  • Add vegetables: You can add some veggies to the mix, like sautéed mushrooms, spinach, or peas, to make it more colorful and nutritious.
  • Make it ahead: You can prepare the pasta bake in advance. Simply assemble the dish, cover it with foil, and refrigerate for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if you’re baking from the fridge.
  • Cheese: You can add cream cheese to the sauce for extra creaminess or switch out the mozzarella for cheddar or Gruyère for a different flavor.
  • Spicy kick: For a little heat, add a pinch of crushed red pepper flakes to the sauce.

Serving Suggestions:

  • Side salad: Serve with a simple green salad or a Cucumber and Tomato Salad to balance out the richness of the dish.
  • Garlic bread: A side of warm garlic bread is always a hit with pasta dishes like this one.
  • Roasted veggies: Roasted broccoli, carrots, or Brussels sprouts make a perfect side to add some color and nutrition.

This Swedish Meatball Pasta Bake is a comforting twist on the traditional Swedish meatballs and mashed potatoes, with a creamy, cheesy sauce that everyone will love. It’s perfect for a cozy dinner and sure to become a family favorite! Let me know if you’d like to tweak the recipe or try a different variation! 😊
