  3. Gradually add ice water, 1 tbsp at a time, until dough just comes together.
  4. Divide dough into two discs, wrap in plastic, and chill at least 1 hour.

2. Prepare the filling

  1. In a large bowl, toss apple slices with sugar, flour, cinnamon, nutmeg, and lemon juice.

3. Assemble the pie

  1. Preheat oven to 425°F / 220°C.
  2. Roll out one dough disc to fit a 9-inch pie pan; transfer and trim edges.
  3. Fill with apple mixture, dot with butter.
  4. Roll out second dough disc, cover pie, and seal edges. Cut slits on top for steam to escape.
  5. Optional: brush top with egg wash and sprinkle sugar.

4. Bake

  1. Bake 20 minutes at 425°F (220°C), then reduce heat to 375°F (190°C) and bake 40–45 minutes until crust is golden and filling bubbly.
