Ingredients (for 1 9-inch pie)
For the filling
- 2 cups mashed sweet potatoes (about 2–3 medium sweet potatoes)
- 1 cup sugar
- ½ cup unsalted butter, softened
- ½ cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp salt
For the crust
- 1 9-inch pie crust (store-bought or homemade)
Instructions
- Preheat oven
350°F (175°C). - Prepare filling
- Boil or bake sweet potatoes until tender.
- Peel and mash until smooth.
- In a large bowl, combine mashed sweet potatoes, sugar, butter, milk, eggs, vanilla, cinnamon, nutmeg, and salt. Mix until smooth.
- Assemble pie
- Place pie crust in a 9-inch pie pan.
- Pour sweet potato filling into the crust and smooth the top.
- Bake
Bake 55–60 minutes, or until a knife inserted near the center comes out clean. - Cool & serve
