Here’s a classic Funeral Potatoes recipe 🥔🧀 — creamy, cheesy, and comfort-food perfect. This dish is a staple at gatherings and potlucks!

🥔 Funeral Potatoes Casserole

Ingredients (serves 6–8)

  • 1 (30 oz / 850 g) bag frozen shredded hash browns, thawed
  • 1 can (10.5 oz / 300 g) cream of chicken soup (or cream of mushroom for vegetarian)
  • 1 cup sour cream
  • 1/2 cup (115 g) melted butter
  • 1/2 cup chopped onion (optional)
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder (optional)
  • Salt & pepper to taste
  • 2 cups crushed cornflakes or potato chips (for topping)
  • 2–3 tbsp melted butter (for topping)

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Grease a 9×13 inch baking dish.
  2. Mix casserole
    • In a large bowl, combine thawed hash browns, soup, sour cream, melted butter, onions (if using), cheddar, garlic powder, salt, and pepper.
    • Mix until well combined.
  3. Transfer to baking dish
    • Spread mixture evenly in the prepared baking dish.
  4. Prepare topping
    • Mix crushed cornflakes or potato chips with 2–3 tbsp melted butter.
    • Sprinkle evenly over the top of the casserole.
  5. Bake
    • Bake 45–50 minutes, until bubbly and the topping is golden brown.
  6. Serve
    • Let casserole cool slightly before serving.

💡 Tips

  • Crispier topping: Use more butter or broil for 1–2 minutes at the end.
  • Vegetarian: Use cream of mushroom soup instead of chicken.
  • Make ahead: Assemble the casserole the night before and bake the next day.
  • Cheesy twist: Mix in extra cheese in the topping for extra gooeyness.

🌟 Variations

  • Bacon Funeral Potatoes: Fold in cooked, crumbled bacon before baking.
  • Spicy version: Add a pinch of cayenne pepper or hot sauce.
  • Cheesy hash brown bake: Use multiple types of cheese (cheddar, mozzarella, Monterey Jack).
  • Sour cream-free: Replace sour cream with Greek yogurt for a lighter version.

I can also give you a “ultimate restaurant-style funeral potatoes” recipe that’s extra creamy inside, ultra-cheesy, with a perfectly crispy golden topping — perfect for holiday meals or large gatherings.
