Ingredients (makes 8–10 egg rolls)

Filling

  • 1 lb (450 g) thinly sliced beef (ribeye or sirloin works best)
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup mushrooms, sliced (optional)
  • 1 cup shredded provolone or mozzarella cheese
  • 2 tbsp soy sauce or Worcestershire sauce
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 2 tbsp vegetable oil

For rolling

  • 8–10 egg roll wrappers
  • 1 egg beaten (for sealing)

For frying

  • Vegetable oil

Instructions

  1. Cook the filling
    • Heat oil in a skillet over medium-high heat.
    • Sauté onions, bell pepper, and mushrooms until tender.
    • Add beef, garlic powder, soy or Worcestershire sauce, salt, and pepper.
    • Cook until beef is browned and cooked through.
    • Remove from heat and let cool slightly.
    • Stir in shredded cheese so it melts slightly into the filling.
  2. Roll the egg rolls
    • Place a wrapper on a flat surface in a diamond shape.
    • Spoon 2–3 tbsp of filling near the bottom corner.
    • Fold the bottom up, fold sides in, and roll tightly.
    • Seal edges with beaten egg.
  3. Fry the egg rolls
    • Heat oil to 350°F (175°C) in a deep skillet or pot.
    • Fry egg rolls in batches 3–4 minutes until golden brown and crispy.
    • Drain on paper towels.
  4. Serve
    • Serve hot with ketchup, cheese sauce, or a creamy horseradish sauce.

💡 Tips

  • Let the filling cool slightly before rolling to prevent soggy wrappers.
  • Don’t overfill — makes rolling easier and prevents bursting while frying.
  • Keep cooked egg rolls warm in a 200°F (95°C) oven while frying the rest.

  • Cheesesteak sub style: Add banana peppers or pickled jalapeños.
  • Healthier baked version: Brush with oil and bake at 400°F (200°C) for 15–18 min, flipping halfway.
