Ingredients (serves 4)

  • 3–4 firm green tomatoes
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1–2 eggs, beaten
  • Vegetable oil for frying

Instructions

  1. Prepare tomatoes
    • Wash and slice tomatoes into ½-inch thick slices.
    • Pat dry with a paper towel.
  2. Set up dredging
    • Place flour in one shallow bowl.
    • Place beaten eggs in another.
    • Mix cornmeal, salt, pepper, and paprika in a third.
  3. Coat tomatoes
    • Dredge each slice in flour → dip in egg → coat with cornmeal mixture.
    • Shake off excess.
  4. Fry
    • Heat ¼–½ inch of oil in a skillet over medium heat.
    • Fry tomatoes 2–3 minutes per side until golden and crispy.
    • Remove and drain on paper towels.
  5. Serve
    • Serve hot with ranch, remoulade, or your favorite dipping sauce.

  • Use firm, tart green tomatoes for the best texture.
  • Don’t overcrowd the pan — fry in batches.
  • Keep fried slices warm in a 200°F (95°C) oven while frying the rest.
  • Optional: add a little cayenne to cornmeal for a kick.
