Here’s a delicious, hearty, and slightly spicy noodle dish featuring seared kielbasa, shrimp, and a soft-boiled egg 🍤🌶️🥚 — perfect for dinner or a special brunch.


🌶️ Spicy Noodles with Seared Kielbasa, Shrimp & Soft-Boiled Egg

Ingredients (serves 2–3)

  • 6 oz (170 g) noodles (ramen, udon, or spaghetti)
  • 6 oz (170 g) shrimp, peeled and deveined
  • 6 oz (170 g) kielbasa sausage, sliced diagonally
  • 2 soft-boiled eggs
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1–2 tsp chili flakes or Sriracha (adjust to spice preference)
  • 2–3 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar (optional)
  • Sesame seeds, for garnish

Instructions

  1. Cook the noodles
    • Boil noodles according to package instructions. Drain and set aside. Toss lightly with a little sesame oil to prevent sticking.
  2. Soft-boil eggs
    • Bring water to a gentle boil. Add eggs and cook 6–7 minutes for soft yolks.
    • Cool in ice water, peel, and set aside.
  3. Cook the kielbasa and shrimp
    • Heat 1 tbsp oil in a skillet over medium-high heat.
    • Add kielbasa slices and sear until golden, about 2–3 minutes per side. Remove and set aside.
    • In the same skillet, add remaining oil and garlic, sauté 30 seconds, then add shrimp. Cook until pink and opaque (2–3 minutes).
  4. Combine noodles & sauce
    • In the skillet, add cooked noodles, soy sauce, chili flakes/Sriracha, sesame oil, and rice vinegar. Toss to combine and coat evenly.
    • Return kielbasa and shrimp to the skillet and mix gently.
  5. Serve
    • Divide noodles among bowls.
    • Halve soft-boiled eggs and place on top.
    • Garnish with green onions and sesame seeds.

Tips for Perfect Spicy Noodles

  • Soft-boiled eggs: Use fresh eggs and cool in ice water immediately to stop cooking.
  • Spice level: Adjust chili flakes or Sriracha to taste.
  • Noodles: Slightly undercook, as they will heat more in the skillet.
  • Add vegetables: Spinach, bok choy, or bell peppers make it even more colorful.

Variations

  • Creamy version: Add a splash of coconut milk or peanut butter for a creamy, spicy sauce.
  • Extra crunch: Top with fried shallots or crushed peanuts.
  • Protein swap: Replace shrimp with chicken or tofu for a different twist.
