Fried Okra

Ingredients

  • 1 lb fresh okra, sliced into ½-inch pieces
  • 1 cup buttermilk (or milk + 1 tsp vinegar)
  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika or cayenne (optional, for heat)
  • Oil for frying (vegetable, peanut, or canola)

Instructions

  1. Prep okra
    Wash and pat dry okra. Slice into rounds about ½ inch thick.
  2. Soak in buttermilk
    Place okra in a bowl with buttermilk for 10–15 minutes.
  3. Coat
    Mix cornmeal, flour, salt, pepper, and optional spices in a shallow bowl.
    Dredge okra in the mixture, pressing lightly so it sticks.
  4. Heat oil
    Fill a skillet ½ inch deep with oil and heat to 350°F (175°C).
  5. Fry
    Fry okra in batches 3–4 minutes, stirring gently until golden brown and crispy.
    Drain on paper towels or a wire rack.
  6. Serve hot
    Perfect as a side dish or snack.

Tips for Crispy Okra

  • Pat okra dry before dipping in buttermilk to reduce sliminess
  • Don’t overcrowd the pan
  • Use a cast-iron skillet for even browning
  • Serve immediately for maximum crispiness

Variations

  • Spicy fried okra: Add cayenne or chili powder to cornmeal
  • Oven-baked: Toss in oil, cornmeal, and bake 20–25 min at 425°F
  • Air fryer: 400°F for 10–12 min, shaking halfway
